Banana Raisin Muffins

            2     cups  whole wheat flour  3/4  cups  frozen apple juice
            1     cup  unprocessed bran            concentrate thawed
                        flakes           1/2  cups  plain low-fat yogurt
            1     cup  rolled oats       1    cup  mashed bananas
            1-1/2  tbs   baking soda     1    cup  raisins
            2           egg whites
            Procedure
            1  Combine the flour, bran flakes, rolled oats, and baking soda in
              a large bowl.  Beat the egg whites in a small bowl until stiff
              peaks form; set aside.  Add the raisins to the flour mixture and
              make sure they are coated with flour mixture.  This helps the
              raisins from sticking together.  Add the apple juice, yogurt,
              bananas to the flour mixture.  Stir to blend.  Fold in the egg
              whites and mix well.  Spoon the batter into well-greased muffin
              tins and bake at 400° for 20 minutes.

            Points: 3.4
            Do not use paper liners.  The muffins stick to them.  Use cooking
            spray ant come out fine.
