Zucchini Bread

            3       eggs                 2    tsp   cinnamon
            2  cups  sugar               2    cups  flour tortillas
            1  cup  vegetable oil        1/4  tsp   salt
            2  cups  grated unpeeled     2    tsp   vanilla
                    zucchinis            1    cup  chopped nuts
            2  tsp   baking soda                   (optional)
            Procedure
            1  Preheat oven to 325.  Combine sugar, oil and eggs and mix
              well.  Add zucchini and mix.  Combine dry ingredients, mix
              well and add slowly to zucchini mixture.  Add vanilla and nuts.
              Pour into greased and floured loaf pan.  Bake at 325 for 50-60
              minutes.
