Cucumber Sandwich
3 whole Cucumbers, Finely 1/2 tsp Onion Powder
Chopped 1/2 tsp Salt
2 whole Cucumber, Sliced 1/4 tsp Pepper
8 oz Cream Cheese, 1 tsp Parsley, Finely
Softened Chopped
1/2 cup Mayonnaise 1 tsp Chives
1/2 tsp Garlic Powder 20 slices Bread
1 tsp Dill
Procedure
1 Peel cucumbers. From three cucumbers remove seeds, chop
pulp and drain by squeezing in cheese cloth. Don't over drain,
your need a small amount of juice for flavor.
2 In bowl, combine and blend all ingredients except bread and
cucumber slices. Cover and chill at least one hour. Can be
chilled overnight.
3 Cut crust from bread. Place cucumber mixture on each slice
of bread and cover with cucumber slice. Slice bread
diagonally into four triangular pieces. Cover and refrigerate
until ready to serve
Servings: 80
Recipe Tips
Garnish with additional dill and chopped chives.
Cut bread with small cookie cutters to form individual shapes.
Sliced cucumbers can be partially peeled to leave some of the
green exposed when slicing.
