Burrata & Tomatoes

               •   1 ball fresh burrata         •   2 tsp balsamic
                   cheese                          vinegar
               •   4 sm plum                    •   Basil pesto
                   tomatoes                     •   Salt & pepper to
               •   Extra virgin olive oil          taste
                                                •   Garlic toast


            Procedure
               1.  Preheat oven to 400°
               2.  Remove skins from tomatoes
               3.  Cut tomatoes in half. Place tomatoes in baking dish, cut
                   side down. Drizzle olive oil over tomatoes and roast for 1
                   hour or until soft.
               4.  Combine roasted tomatoes, balsamic vinegar, basil
                   leave, salt and pepper.
               5.  Place 3 Tbls basil pesto on tomato mixture
               6.  Cut burrata ball into pieces and place on tomato & basil
                   mixture.
               7.  Serve on toasted French bread or garlic toast.
