Derby Cheddar Pecan Cheese Tort

            12 oz package grated medium     ½ cup frozen spinach, thawed
            sharp cheddar cheese at room    & drained
            temp
                                            ½ tsp garlic salt
            1 cup pecans chopped
                                            ½ tsp oregano
            1 med onion finely chopped
                                            1 Tbs beef granules
            2-8 oz pkgs cream cheese,
                                            ½ tsp basil
            softened
                                            Dash pepper, celery seed,
            ½ cup mango chutney (or any
                                            cumin and nutmeg
            jam like mango spread)


            Procedure
               1.  Combine cheddar cheese with pecans, onion and 4 oz cream
                   cheese.  Mix well.
               2.  Place half of the mixture in an 8” round soufflé dish and press
                   to consolidate.
               3.  Combine 8 oz cream cheese with chutney, blend thoroughly.
               4.  Spread over cheese mixture.
               5.  Drain spinach completely, squeeze (really squeeze) out all
                   excess moisture.  Add seasonings and remaining 4 oz of
                   cream cheese.  Blend thoroughly and spread over cream
                   cheese
               6.  Top with remaining cheddar cheese mixture.
               7.  Refrigerate until serving time.
               8.  To serve invert on a plate and serve with crackers.
