Meat Loaf Wellington

            Weight Watchers

            5   oz   ground beef         1/3  cups  part-skim ricotta
            1        egg                           cheese
            2   Tbs  minced celery       1    Tbs  plain dried
            2   Tbs  onions                        breadcrumbs
            1/4  tsp  salt               1    Tbs  Worcestershire
                                                   sauce
            1/4  tsp  pepper
            2   Tbs  skim milk           3    oz   peeled cooked
                                                   potatoes; mashed
                                         2    Tbs  grated cheddar
                                                   cheese
                                         2    Tbs  margarine

            Procedure
            1  In medium bowl combine first 10 ingredients: shape into loaf
              and place in loaf pan.  Bake at 375° for 30 minutes.  In small
              bowl combine potatoes, margarine and cheese and whip until
              smooth.  After loaf has cooked for 30 minutes remove loaf
              from oven and increase oven temperature to 425°. Transfer
              cooked meat loaf to ovenproof serving platter and spread
              potato mixture over entire loaf.  Return loaf to oven and bake
              15 minutes at 425°.  Potato mixture should lightly brown.
