Meat Balls

            3     Tbsp  canola oil       1          egg
            1     small  onion finely    3    Tbsp  fresh parsley, finely
                        chopped                     chopped
            1     lb    lean ground beef  1/2  Tbsp  salt
            1 1/2  cups  cooked quinoa   3/4  Tbsp  ground black
            1/2   cup   grated parmesan             pepper
                        cheese           1    lg    handful fresh basil
                                                    leaves
            Procedure
            1  Preheat oven to 425°
            2  Heat the canola oil over medium heat.  Add the onions and
              cook, partially covered, until soft, about 10 minutes.  Remove
              from heat and cool.
            3  In a large bowl, combine beef, quinoa, parmesan, egg,
              parsley, salt, pepper and cooled onions.  Mix to combine,
            4  Roll the meat mixture into 2-inch balls and set on aluminum
              lined cookie sheet.
            5  Bake 20 - 25 minutes, until nicely browned but still soft to
              touch.
