Spicy Beef Strips

            2     oz    dry sherry       1/2  tsp   red wine vinegar
            1-1/3  Tbs  sesame oil       1/8  tsp   dried red pepper
            1/2   tsp   fresh lemon juice          flakes
            10    oz    lean beef top    1/2  cups  snow peas; cut into
                        round; 1/2" thick          thin strips
            1/2   cups  scallions; sliced   1   cup  mushrooms;
            2     Tbs  soy sauce                   quartered
                                         1/2  cups  fresh red pepper,
                                                   sliced
                                         2    cups  cooked rice
            Procedure
            1  In small bowl, combine sherry, 1TBS sesame oil and the
              lemon juice.  Place meat on rack in broiler pan.  Brush both
              sides evenly with sherry marinade; let stand 5 minutes.
            2  Preheat broiler.  Broil meat 4” from heat, 2 minutes; turn and
              broil 2 minutes longer or to desired doneness.  Keep warm.
            3  In small bowl, combine scallions, soy sauce, vinegar and
              pepper flakes.  In medium skillet, over medium heat, heat the
              remaining 1 tsp sesame oil; add snow peas, mushrooms, red
              pepper and scallion mixture.  Stir fry 3 minutes, cook until
              tender-crisp. Add scallion mixture in small bowl and stir.
            4  Slice beef diagonally into strips.  Toss beef with vegetables.
            5  Serve over cooked rice.
            Servings: 4
            Recipe Tips
            Add 1 cup of beef broth and 1 TBS of corn starch to meat and
            vegetable mixture to make it juicer.
