Broccoli Potato Soup
4 cups chopped broccoli 6 Tbs sour cream
1 cup onions 1 tsp dried oregano
1/2 cups bell peppers 3/8 tsp salt
10 oz potatoes 3/8 tsp pepper
1/2 cups scallions 1 Tbs vegetable oil
4 cups chicken broth
Procedure
1 In large pan sauté onions until golden brown. Add chicken
broth, broccoli, potatoes, scallions, oregano, salt, pepper, and
bell peppers. Bring to boil and then simmer over medium heat
until vegetables are done. You will need the broth so save it.
Remove vegetables from broth and in food processor puree
vegetables and return to the broth. Add sour cream and heat
throughout.
