Bruschetta

               •  2 ripe plum tomatoes
               •  ½ clove garlic
               •  Red onion (thin sliced and diced – very small amount)
               •  2 tsp extra virgin olive oil
               •  2 tsp balsamic vinegar
               •  4 fresh basil leaves, thinly sliced
               •  2 Tbs basil pesto
               •  salt & pepper to taste
               •  French-bread slices


            Procedure
               1.  Dice tomatoes into small chunks
               2.  Combine diced tomatoes all ingredients except bread in
                   bowl and stir.
               3.  Brush one side of bread slices with olive oil and toast.
               4.  Serve toasted bread with tomato mixture.
