Crab Imperial
1 lb crab meat (lump or regular)
1 Egg – slightly beaten
2 Tbls mayonnaise
1 sm Onion – finely diced
1 Tbl Green pepper – finely diced
Sprinkle of dried parsley flakes
3/4 tsp old bay seasoning
1 Tsp Prepared mustard
4 Tbls butter
Cracker crumbs
paprika
Procedure
1. Mix all ingredients except crab and butter in small bowl.
2. Place crab meat in larger bowl and gently incorporate
above mixture into crab. Try not to break up crab lumps.
3. Portion out 4 serving into bake ware.
4. Top with cracker crumbs.
5. Melt butter and pour over crumbs.
6. Sprinkle with paprika.
7. Bake 15 minutes at 425°
Note: If too loose, use small amount of thin white sauce to unite.
