Meat Loaf Wellington

            Weight Watchers

            5   oz   ground beef         1/3  cups  part-skim ricotta
            1        egg                           cheese
            2   Tbs  minced celery       1    Tbs  plain dried
            2   Tbs  onions                        breadcrumbs
            1/4  tsp  salt               1    Tbs  Worcestershire
                                                   sauce
            1/4  tsp  pepper
            2   Tbs  skim milk           3    oz   peeled cooked
                                                   potatoes: mashed
                                         2    Tbs  grated cheddar
                                                   cheese
                                         2    Tbs  margarine

            Procedure
            1  In medium bowl combine the first 10 ingredients: shape into
              loaf and place in loaf pan.  Bake at 375° for 30 minutes.  In a
              small bowl combine potatoes, margarine and cheese and whip
              until smooth.  After loaf has cooked for 30 minutes remove
              loaf from oven and increase oven temperature to 425°.
              Transfer cooked meat loaf to ovenproof serving platter and
              spread potato mixture over entire loaf.  Return loaf to oven
              and bake 15 minutes at 425°.  Potato mixture should lightly
              brown.
