Empress Chicken

            1   cup  chicken cubed       3    Tbs  soy sauce
            2   Tbs  plum wine           1/2  cups  finely chopped
            1/2  cups  bamboo shoots               celery
            1/2  cups  sliced mushrooms   3   Tbs  cooking oil
            2         scallions cut into   1/2  cups  water
                      strips
            Procedure
            1  Heat cooking oil.  Stir fry chicken, onion, soy sauce and wine
              over high heat for 5 minutes.  Add 1/2 cup chicken broth and
              bring to a boil.  Reduce heat and cook 10 minutes.  Add
              bamboo shoots, celery and mushrooms and cook until tender.
              Serve with rice.
