Braised Chicken with Vegetables

            1   tsp   cooking oil        1         garlic clove
            4         chicken breast     1         medium bell pepper
                      halves             1/2       medium tomato
            1/4  tsp   salt              1/2  cups  water
            1/8  tsp   pepper            1    tsp   fresh parsley
            1/2  cups  onion, chopped
            Procedure
            1  Salt and pepper chicken and sauté' until brown.  Remove
              chicken from pan.  In same pan sauté' onions and garlic until
              onions turn lightly brown.  Add bell pepper and sauté 2
              minutes.  Add chicken, tomato, mushroom, water and parsley
              and bring to boil.  Reduce heat, cover and simmer for 25
              minutes.  Remove cover and simmer 5 minutes or until
              chicken is done.
            Servings: 4
