Steak Cooking

                       NY strip steak






            Procedure
             1.  1 ½” to 2” NY strip steak
             2.  Bring steak to room temperature. Take the steak out of the
                fridge 30 minutes prior to cooking to bring to room
                temperature.
             3.  Start grill, you want it to be hot. 500˚ or more
             4.  Dry steaks: Pat dry with paper towels.
             5.  Season with salt, pepper, and garlic. Or anything else you
                like.
             6.  Turn off one of your grill burners.
             7.  Put steak on hot grill over the lighted burners for 4 minutes.
                Steak should caramelize.
             8.  Turn steak and cook another 4 minutes.
             9.  Turn steak and put on the area of grill where the burner is
                turned off. Cook for about 4 minutes.
             10. Check with meat thermometer. Steak should be about 140˚
                to 145˚.
             11. Turn steak and cook more if needed.
             12. Check with meat thermometer every minute or so.
             13. Keep cooking until it reaches the desired temperature.
             14. When steak reaches the desired temperature, remove from
                the grill, cover loosely with aluminum foil, and let it rest for
                10 minutes or so before cutting.

            NOTE: Cook times are approximate. Prime steaks cook quicker
            than choice steaks. Also, how long you leave the steak out of the
            fridge before cooking makes a difference
