Dave's Scalloped Potatoes & Cheese

            6       medium potatoes      4    cups  ½ & ½ milk
            1/2  lbs  ham (cubed)        1/8  cup  flour
            1/2  lbs  Velveeta cheese    1/2  tsp   salt
            1       small onion          1/2  tsp   pepper

            Procedure
            1  Slice potatoes, onions and Velveeta cheese. Cut ham into
              small cubes.
            2  In a 9" x 14" greased casserole dish place layers of potatoes,
              cheese, ham and onions. You should have at least 3 layers.
              Sprinkle small amount of milk and flour between layers. Pour
              the remaining milk over the final layer.  Milk should be just to
              top of potatoes but not over.
            3  Cover with a lid or aluminum foil and bake for 1 hour. Remove
              the cover and bake for another 30 minutes to an hour until the
              potatoes are cooked. Potatoes should be soft and not crunchy
              when done. Remove from the oven and let sit 20 minutes
              before serving.
            Servings: 8

            Recipe Tips
            Place casserole dish on cookie sheet to catch drips from boil
            overs.

            Venting the lid or aluminum foil during the first hour will help
            keep milk from boiling over.

            Placing sliced potatoes, flour and milk in a mixing bowl and
            mixing with hands can help distribute flour throughout the milk.
            Then place potatoes in casserole.

            You can use heavy cream instead of the ½ & ½ and then
            eliminate the flour.
