Cranberry Poppy Seed Salad
1/2 cup canned cranberry 1/4 cup olive oil
sauce 2 Tbls water
2 Tbls poppy seeds 2 Tbls sugar
2 Tbls white sugar 1 pinch salt
1/4 cup raspberry balsamic 1 pinch pepper
vinegar
1/3 cup pecans coarsely 1/3 cup crumbled blue
chopped cheese
1/3 cup bacon coarsely 1/2 small red onion sliced
chopped thin (optional)
1/2 cup dried cranberries ½ cup apple (optional)
Procedure
1. Place cranberry sauce, poppy seeds, sugar, balsamic
vinegar, oil, water, salt and pepper in nutribullet and
blend.
2. In a large bowl combine lettuce, spinach, pecans, bacon,
dried cranberries and blue cheese. Add the desired
amount of dressing and toss.
